Coffee Kit Kat Ice Cream

This is a tweak of "copy cat" (or copy kit kat) recipe from Ben & Jerry's Coffee Heath Bar Crunch. I put in Kit Kats at my boyfriend's request. Even with his request for kit kats in the ice cream, he agreed that the original batch I made last week with heath bars was better.

2 Eggs (I use egg beaters to avoid the raw egg)
3/4 Cup of Sugar (I actually used 1/2 C of white sugar and 1/3 C of brown sugar)
2 Cups of Whipping Cream
1 Cup of Whole Milk
3 Tablespoons of Instant Coffee (divided)
1 1/2 Cups of Chopped Kit Kats

  1. Whisk the eggs until light and fluffy (about 2 minutes)
  2. Slowly add the sugar while continuing to whisk.
  3. Once all the sugar is in, whisk for 1 minute more.
  4. Add the milk, cream, and vanilla and mix to blend.
  5. Add 2 Tablespoons of the Coffee
  6. Put in the Fridge for a minimum of 2 hours
  7. Put into Ice Cream Maker according to Manufacturer's instructions.
  8. About 2 minutes before it is done, mix in the Kit Kat and last Tablespoon of Coffee.

I store it in tupperware containers in the Freezer. Enjoy!
